Smash Burger

Burger:

12oz ground beef (3 oz. a patty)

cheese of your choice (I use fancy cheese here but honestly American is still the best)

burger buns (potato bun for the best result)

pickles (home made)

1 medium-sized onion, sliced thin

Sauce:

2 tbsp mayonnaise

4 Tbsp sour cream

1 tsp ginger

1 tsp garlic

1 tbsp green onions

2 tbsp extra virgin olive oil

1 tsp salt and pepper, more to taste

Pickles:

1 large cucumber

1 cup water

1 cup distilled white vinegar

2 to 4 tbsp Honey

1 tbsp black pepper corns

1 tbsp coriander seeds

1 tbsp salt

Directions:

Preparation of patty: Grind chuck roast with grinder. I like the medium sized fitting or use pre-ground beef 20% fat 80% lean for best result. Roll ground beef into into 3 oz balls and place in the refrigerator.

Sauce: In a mixing bowl, add mayonnaise, sour cream, ginger, garlic, chopped green onions, extra virgin olive oil, and salt and pepper. Mix ingredients together. Adjust to taste.

Slice one white onion with a mandolin on thin setting and set aside until its time to cook with burger patty.

Pickles: In a small pot heat water, vinegar and sugar/honey. Stir until all sugars are melted. After sugars are melted, remove pot from heat. In a heat safe container add sliced cucumber, black peppercorns, coriander seeds, and salt then add the liquid mix and seal the container up. Let container sit and cool for at least 1 hour before using.

Cooking smash burger patty: Heat pan or griddle up with high smoke oil like avocado oil until it is smoking hot. Be sure to turn on the exhaust fan above stove on or your smoke alarms will go off. When the pan/griddle is ready add several the meat balls to the pan, ensure there is with adequate space between balls. Then place a handful of fresh thin slice onions on top of each meat ball and use a spatula to smash the burgers down flat. If you have weighted grill press, use that. (Note: to avoid the burger sticking slowly slide spatula off burger, don't just lift straight up.) Once edges turn brown flip burger and let cook a few more minutes and add cheese. Once cheese is melted, remove patty and assemble the burger.

Assembly of burger: On a toasted potato bun, add sauce to both sides. Place cooked patty on topped with homemade pickles.
