Smash Burger

Burger:

ground beef 3 oz. a patty

cheese of your choice (I use fancy cheese here but honestly American is still the best)

burger buns (potato bun for the best result)

pickles (home made)

onions 1 sliced thin

sauce: mayo - 2 Tbsp.

sour crème - 4 Tbsp.

ginger - 1 tsp

garlic - 1 tsp

green onions - 1 tbsp.

olive oil - 2 tbsp.

salt and pepper - 1 tsp each more to taste

Pickles:

1 cucumber

Water - 1 cup

White Vinegar - 1 cup

Honey - 2 to 4 tbsp.

black pepper corns - 1 tbsp.

coriander seeds - 1 tbsp.

salt - 1 tbsp.

Ingredients

- directions:

grind chuck roast or use pre ground beef 20 80% for best result, roll into 3oz balls and set aside in the fridge.

slice one whit onion thin and set aside

- sauce: in a bowl add all ingredients listed above and mix well. adjust to taste.

- pickles: heat water, vinegar and sugar/honey in pot till all sugars are melted and mixed then remove from heat, add all other ingredients in a heat safe container. add heated liquid into container and seal. let sit and cool for at least 1 hour before using.

- smash burger: on a smoking hot pan or griddle add some high smoke point oil like avocado oil and the add the meat balls with adequate space between balls. add a load of fresh thin slice onions on top and use a spatula to smash the burgers down flat. to avoid the burger sticking slowly slide spatula off burger don't just lift straight up. once edges turn brown flip burger and let cook a few min add cheese now if you would like. remove paddy and assemble the burger
